I have been a huge fan of Bahn Mi for years now ever since my first bite… I wish I remember where. After a truly delectable and delicious lunch at Bon Me I wanted more of the same for dinner.
The kids requested rice at dinner for tonight so my starting point was rice in the rice cooker. We always have carrots from Vermont in the fridge and this week we also have some cabbage from Farmers To You. Bahn Mi inspired rice bowls for dinner.
I stopped at Formaggio Kitchen because I wanted to pick up some of my favorite Kozlik’s Canadian mustard (then of course left without getting it.) Fresh Pond Market and Hi Rise Bakery both have great roasted chicken but not until about 4 or 5 p.m., and the best value roasted chicken is from Market Basket. However, after a day running around posting “Call for Artist” posters, tonight is all about convenience.
So here’s what I did. Picked up a 1/2 a roasted chicken at Formaggio, two Armenian/Kirby/Mediterranean cucumbers and some fresh cilantro. Pickled some cucumbers (1 tbsp. sugar, 1 tsp of Kosher salt) à la Momofuku from this recipe. Then I wanted to julienne the carrots and I didn’t have daikon but I did have cabbage so I pickled those based on this recipe with way less sugar because I like to taste the vinegar more than the salt.
Dinner will be a bowl of rice topped with some shredded roasted chicken, both quick pickles, a splash of Fish sauce and Sriracha on the table: Dinner for a snowy day!
