I feel a cold coming on… Time to upgrade my morning with a smoothie.
Olivia’s Organics was on sale at Whole Foods (Fresh Pond) so I bought a container of baby arugula for the Cat Cora salad I made last night, and I bought a container of baby spinach because we love spinach. This was a quick easy smoothie. I like the taste of citric acid/vitamin C, but if you don’t just don’t put a full packet of Emergen-C in the blender.
Ingredients
- 1 handful of baby spinach
- 1 packet of Emergen-C
- 1 TBSP of honey
(more if you like it sweeter, less if you don’t) - 1 peach
(I had one from our apple share, part of my Lindentree CSA share) - Option to add frozen fruit if you want a thicker texture or more fruit
- 1/2 a cup of yoghurt
(I had a newly expired but still totally fine container of Greek yoghurt so I used that) - 1/2 cup of water
(feel free to sub other liquids here milk, orange juice, beet juice, vodka (just kidding)….well sort of.)
Toss everything in the blender. I think order counts so here it is:
spinach, honey, Emergen-C, yoghurt, peach, water
I have a vintage blender do order counts to not gum up the works. If you have a Vitamix (I hear the Ninja is great too) then order may not matter.
Hi Leah! I am feeling the sniffles coming on and I’m so worried. I do not have time for a cold. I have been drinking straight Emergen-C, but I think this smoothie would be a better choice. Thanks for sharing!

I know! Who has time for a cold right now?! Go for it and try a smoothie! I’m going to start my day with one tomorrow too.

Sounds yummy! I’ve never thought to add Emergen-C, but I do add most of those other yummies!

I have a Vitamix and order does not matter at all. SO nice!!! I do have a cold, unfortunately, so I should give your smoothie recipe a try.

Sounds interesting. Glad there are no bananas in it, I may even think about trying it.

I am apparently allergic to bananas but I still eat them on occasion – I find them overpowering in smoothies though.
