a clove of garlic
a spoonful of Dijon mustard
2 TBSP of olive oil
1 TBSP of cider vinegar
fresh thyme if you have it
a pinch of salt, more to taste
a pinch of pepper , more to taste
Makes enough dressing for one well dressed or two ‘how I like it dressed’ large salads. I don’t like lightly dressed but not coated in dressing either.
Put everything in a small bowl. Mix with a fork or little whisk until combined.
