I am not usually a fan of taking one food and making it into a soup, a sandwich, a cocktail, a savory amuse bouche, a dessert, and a granola bar flavour. This week, though, the apples are plentiful, the air is cool and for some horribly mistaken reason Whole Foods is pumping fake cinnamon scent out of its vents blasting you as you walk in or out of the store. So to remedy that tragic experience and because the leaves are falling and Canadian Thanksgiving is already here, I am feeling apple pie -ish and I am in the mood to make an apple pie smoothie.
- 2-3 leaves of kale
- 6 sweet cherries
- 2 small apples
- 1/2 cup of vanilla yoghurt
- 1 1/2 – 2 tsp. cinnamon
- 1-2 TBSP flax meal
- a tsp of honey
- a splash of water as needed
I used up my daughter’s yoghurt from breakfast that she did not want. This was a rich 2% Liberté yoghurt but you could use non fat too. Since the yoghurt is sweetened I added only a teaspoon of honey. If you make this with plain yoghurt you may want some extra honey or other sweetener.
I used frozen Whole Foods cherries. The kale is from our CSA as are the apples.
Pull the kale off its stem and rip it up. Wash and slice the apples off the core. I do quarters around the core. Add all the ingredients into the blender. Add water as you go to get the thickness you like. I used about 3/4 cup of water.
