You can get creative with this, but for a basic chicken mix for lettuce wraps this is what I like to do. You could also use this for a bahn mi sandwich, or an Asian chicken salad base too.
Chicken:
- 1 rotisserie chicken
- 1 bunch of green onions/scallions
- 1 bunch of cilantro
- 1 lime
- 1 knob (1 inch or so in length) of fresh ginger
Take the skin off the rotisserie chicken. With your hands or a fork, shred the chicken into bite size pieces and place in a large bowl.
Once the entire chicken has been shredded, wash a chop the top part of the cilantro including all the leaves and the top parts of the stem. Toss the cilantro on top off the chicken. Peel your knob of ginger and with a grater or microplane grate the ginger over the chicken.
Squeeze the lime over the chicken and toss the chicken, lime, and cilantro together.
Wash and chop the scallions. Trim the bottom and chop 1/2 way up the greens as well leaving the tops of the greens for a vegetable stock or your compost heap.
Toss the chicken again, cover and refrigerate.
